Pan seared perch/walleye
Submitted By

Stumbled on this idea. Bought some pecan meal and didn't know how to use it until I was cooking up some fish .... and got the idea. Hope you enjoy.
Ingredients
1/4 cup flour
1/4 cup pecan meal (very finely ground pecans)
Teaspoon garlic powder
Tablespoon Old Bay Seasoning
Dash of fresh ground black pepper or cayene pepper
Tablespoon of olive oil (in pan)
Fresh squeeze of lemon (on fish as cooking)
Instructions
This can be used for almost any fish. It works for perch, walleye, crappie, grouper, catfish. This is very light and lets the fish control the flavor of the finished meal. Mix the first 5 ingredients together in a bowl or on a large plate. Rinse the fish and remove excess water by patting dry with paper towels. Dredge the filets thru the mixture coating both sides. Place the olive oil in a large no stick skillet and bring to med/med hi temperature. Drop filets into pan and squeeze lemon on them. Sear them quickly on each side .... for perch 2-4 minutes per side .... for walleye and larger, thicker filets about 4-6 minutes each side. Cooking time can vary based on temp of pan while cooking. This is easy and fairly healthy. Recipe can be made with just flour and dry spices.Add spices you enjoy with your fish. Pecan meal can be found on the net and in some stores. Tight lines and good eating!
