Ingredients
2-4 eggs
seasoned bread crumbs
parmesan cheese
mrs. Dash
garlic powder
butter
Pam no stick spray
Instructions
Soak fillets in cold water with table spoon of baking soda for 1/2 hour & rinse. Cut fillet into serving size pieces. Butterfly any thick pieces. Beat egg & dip fillets. Dredge fillets in bread crumbs, parmesan cheese & seasonings. Spray pan with no stick spray & add some butter for flavor. Brown fillets on one side & before flipping sprinkle with more parmesan cheese. Fillets will come out nice & crispy! My favorite with walleye, calico, rock bass & white bass. If you don't mind the calories add more butter. Or substitute crushed potato chips for the bread crumbs & forget the parmesan.
