Ingredients
Salt and pepper
Sliced onions
Sliced celery
Instructions
Using a whole "hog dressed" white fish re-wash completely, salt and pepper the inside of fish, line with sliced onions and some celery, place in brown paper bag. Pre-heat oven to 400 degrees. Place in paper bag, do not tie, only roll closed. Place on baking sheet, i.e. cookie sheet. Bake approx. 45 minute to 1 hour, or until the meat is flakey and pulls away from bone. Cut open paper bag, place on serving dish. Peel skin from meat. Servings of meat will separte from bone. When half of the fish is served, the skeleton will peel away from rest of meat and you can serve other portions from the remainder
